Ortiz anchovies are line caught daily with live bait during European Spring. As soon as they are brought back to port their heads are removed and the anchovies are laid in barrels separated by layers of salt for 6 months. Once mature they are then cleaned, filleted and laid gently side by side all by hand.
Mix into pastas, serve on Tapas with grated tomato relish, great addition of rich protein to a fresh light salad.
Packaged with a fork to allow you not to disturb the delicate fillets with your fingers.
